Kitchen knives made from ceramic zirconia, the blade is hardened using extreme heat and is second only to diamond in hardness. It is extremely durable and will retain its sharpness for an unbelievable length of time. As the material is not metal, the knife will never rust, it is unaffected by salty or acidic foodstuffs, in normal use it is virtually indestructible. Metal knives can emit ions, which sometimes affect the flavour of food, not the case for ceramic knives, which are particularly recommended for cutting fruit and vegetables.
