For example, St. Hubert, patron saint of the chase, would be identified by a stag with a crucifix between its horns. St. Denis, the patron saint of France (who died in the third century AD), would be carrying his own head, indicating that the historic antagonism between the two countries may be of longer standing than many of us thought.
